TWD-Strawberry Johnnycakes
I hope with school starting next week I will be more organized in the kitchen. I didn't plan too well for this week's recipe and the only fruit I had that was ripe was strawberries. They are not my favorite for baking because they tend to get mushy. But despite that, this dessert worked. I really liked this recipe. It was easy and tasty. I liked making the individual servings in ramekins which makes for easy serving and less of a temptation for me as otherwise I might eat more than I should. The cornmeal adds the perfect amount of texture. I will make it again once my plums and nectarines are ripe that I bought yesterday.

Less temptation! That is the good thing about smaller portion sizes!
Glad you liked the cobbler. I attempted the crostata but am thinking of trying the cobbler another day.
The cornmeal did add a nice touch to the topping didn't it. I love the taste of warm strawberries - this was tasty I'm sure.
Now I definitely think, I've chosen the wrong cornmeal. Mine was so finely ground that it did not add that extra "crunch crunch", however the topping was still crunchy and delicious.
We made it with apples, plums and almonds and loved it.
Glad you liked it. I didn't love it. I found the topping odd (and I love cornmeal....wondering if it is because I used white cornmeal).
Very nice. I used ramekins too and had the exact same drips down the side. These were easy, weren't they?
Strawberries and cornmeal sound like such a good combination, I made the crostata but definitely will give the cobbler a try!
Love the use of individual ramekins. We thought about doing that, but didn't end up having enough for the amount of fruit and dough, and ended up making one large cobbler instead. Loved this recipe.
